Chicken and Barley Chili

A quick easy meal for the whole family that is filled with a lot of nutrition!
Ingredients
  • 6 chicken thighs, cut into bit size pieces
  • 1- 15 ounce can tomato sauce
  • 1- 15 ounce can diced tomato
  • 1¾ cup chicken broth
  • 4 cups water
  • 1 cup pearled barley
  • 1- 15 ounce can black beans, drained and rinsed
  • 1½ cup frozen corn
  • 2 tablespoon chili powder
  • 2 teaspoon cumin
  • 1 teaspoon oregano
  • ¼ teaspoon cayenne pepper
  • 1 teaspoon salt
  • ½ cup monterey jack cheese
  • ½ cup cheddar cheese
Instructions
  1. In slow cooker, add all the ingredients except the cheeses. Mix to combine. Set crockpot on low for 7-8 hours. Add cheese on top to garnish and enjoy!
