Chicken & Black Bean Quesadilla

Yummy Quesadilla with a great mixture of vegetables, beans, chicken and cheese!
  • 1 tbsp olive oil
  • 3 Chicken Breast, cooked and diced
  • 1 oz Fajita Seasoning
  • 2 bell peppers,diced
  • 1 onion, diced
  • 1-15 ounce can black beans, drained and rinsed
  • 8- 10inch whole wheat tortilla
  • ~1½ cups monterey jack and cheddar cheese mix
  1. Preheat oven to 350 degrees F (175 degrees C)
  2. Heat the oil in a large saucepan over medium heat. Stir the bell peppers and onion until they are soft. Add chicken, beans, and fajita seasoning. Cook and stir occasionally for about 10 minutes.
  3. Dampen each tortilla (this will allow it to get crispy). Then layer half of each tortilla with the chicken and vegetables mixture. Sprinkle with cheese and fold tortilla in half and place on baking sheet.
  4. Bake quesadillas in oven until cheese is melted and tortilla is crispy, about 10 minutes. If needed put under broiler for a few minutes to crisp up.
