Chicken & Vegetable "Fried" Rice

Serves: 4-6
A colorful, healthy version of fried rice. It's quick and easy!
  • 2 eggs
  • 2 tablespoon water
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 2 medium carrots, diced
  • 2 small heads of broccoli, finely chopped
  • ¾ cup frozen corn
  • ½ cup frozen peas
  • 2-4 tablespoon soy sauce (to your taste)
  • 3 cups cooked rice, cold
  • 3 chicken breast, cooked and chopped
  1. In a small bowl, beat egg with water. Melt butter in large skillet over medium low heat. Add egg and leave flat until cooked through. Remove from skillet and cut into shreds.
  2. Heat oil in same skillet; add onion and sauté until soft. Add pepper, carrots, and broccoli and cook until soft. Add corn and peas and sauté for about 2 minutes. Add rice, chicken and soy sauce. Stir fry until heated through about 5 minutes. Stir in egg and serve!
