Fiesta Chicken

Simple, quick and Delicious!
  • 4 chicken breasts
  • 3 tablespoon taco seasoning
  • 1 can rotel tomatoes
  • ½ cup cheddar cheese
  • ½ cup monterey jack cheese
  1. Preheat oven to 375 degrees F (190 degrees C)
  2. Drain juice from can of rotel into a 9x13 inch baking dish.
  3. Rub taco seasoning on both sides of chicken breasts, and distribute rotel tomatoes over each piece of chicken.
  4. Bake for 25 to 35 minutes, or until chicken is tender and juicy and its juices run clear.
  5. Sprinkle chicken evenly with cheese, and continue baking for an additional 3 to 5 minutes, or until cheese is melted and bubbly.
