Key West Lime Shrimp

I made dinner in a split second yesterday. Well, maybe not that fast, but it was a quick and easy dinner. Adding the Shrimp to the grill gives it a nice summer touch to the recipe. You’ll notice that I use raw honey because it’s in its most pure form, but regular honey can work for this recipe as well.  I served over Brown Basmati Rice and a side of steamed green beans, but this shrimp would be delicious on a dinner salad too! Enjoy!

Quick and Yummy Shrimp Dinner.
  • 1 pound large shrimp, peeled and deveined
  • ½ cup olive oil
  • 5 gloves of garlic, minced
  • ¼ cup honey
  • juice of two small limes
  • zest of two small limes
  • 1 tsp salt
  • ¼ tsp black pepper
  1. Measure olive oil in measuring cup. In a small saucepan, pour about 2 tablespoons of olive oil in saucepan and heat. Add garlic and sauté for about 1 minute. Add the rest of the ingredients and whisk. When combined, add marinade into glass dish and mix in shrimp.
  2. Let shrimp marinate for 30-60 minutes, stirring once during that time.
  3. Heat grill pan about 10 minutes before you are ready to cook. Add shrimp in a single layer to grill pan and cook for about 2 minutes on each side or until shrimp in pink and cooked through. Remove from grill and serve immediately.
