Quick Shrimp Scampi over Angel Hair

This meal can be completed 20 minutes start to finish.
  • 2 tablespoon olive oil
  • 6 garlic cloves, minced
  • ⅔ cup clam juice
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoon cold butter, cubed
  • ¼ cup lemon juice
  • 2 tablespoon flat leaf parsley, chopped
  • ¼ cup fresh parmesan cheese, grated
  • 1 pound angel hair, cooked al dente
  1. While pasta is cooking heat olive oil in a large saucepan. Add garlic and stir (be careful not to burn). Add clam juice and bring to a boil. Add Shrimp and cook for about 4 minutes. Remove shrimp and place on tray. Add butter and stir until melted. Add lemon juice and parsley. Add shrimp back into the pan and remove from heat. Once pasta is drained, add shrimp and sauce on top of pasta and stir to combine. Serve with parmesan cheese.
