Slow Cooker Chicken Taco Soup

Fast weeknight meal that is sure to please the whole family. Add over rice and top with shredded cheddar.
  • 1-15 ounce can chili beans
  • 1-15 ounce can black beans
  • 1 onion, chopped
  • 2- 10 ounce cans diced tomatoes with green chiles
  • 1½ cup frozen corn
  • 1 packet taco seasoning
  • 3 chicken breast
  • 1- 12 ounce beer -or- 1½ cup chicken broth
  1. Add first 5 ingredients in slow cooker (chili beans through taco seasoning) and stir to combine. Add chicken breast to mixture. Top with beer or chicken broth. Make sure chicken is covered by liquid.
  2. Cook on low for 5-6 hours then take chicken out and shred. Add back into slow cooker and cook until heated through.
  3. Enjoy!
