Spanish Brown Rice

Serves: 6
Super easy spanish rice to complement any Mexican meal.
  • 2 tablespoon olive oil
  • 1 onion, diced
  • 1 garlic clove, minced
  • 2 cups brown rice
  • 4 cups chicken broth
  • 2 tablespoon tomato paste
  • ¼ teaspoon oregano
  1. In large skillet brown rice in olive oil until starting to brown. Add onion and garlic and cook until onion softened.
  2. In sauce pan bring chicken broth, tomato paste and oregano to a boil. Add the rice to the broth and bring to a boil. Lower to a simmer and cook covered for about 30 minutes or until water is absorbed and rice is soft.
